1 bunch fresh spinach, chopped 1 tomato finely chopped 1/2 tsp. red chilli powder 1/4 tsp. turmeric powder 1/4 tsp. dried mango (amchoor) powder 1/4 tsp. wheat flour 2 pinches asafetida powder 1/4 tsp. each mustard & cumin seeds salt to taste 1 tbsp. oil
Wash, drain spinach in a colander. Heat oil in pan, add seeds, allow to splutter. Add asafetida, tomatoes, stir. Add all spice powders, stir and cook for a minute. Add spinach, cover, allow to soften. Stir and add flour, simmer further for 2-3 minutes. Take off fire, serve hot with roti, puri or rice.
